I love having my niece Aubrie sleep over, and I love packing her lunches with awesome food that her friends will want to devour. When it comes to keeping my niece’s lunchbox “on fleek” as the kids say (LOL), I know I can’t go wrong with Jif peanut butter and Smucker’s jelly. Seriously, who doesn’t love PB&J? But did you know there is so much more you can do to take PB&J to the next level? These peanut butter and jelly french toast roll ups are a fun treat that kids (and adults) will love!
Aubrie’s favorite combination is Jif Natural Crunchy Peanut Butter & Smucker’s Natural Strawberry Fruit Spread, just like her aunt! Jif peanut butter has the perfect smooth creamy texture, with more fresh roasted peanut taste, and Smucker’s jelly adds the perfect touch of sweetness because it’s made with real fruit. To make these cute french toast roll ups, I spread the peanut butter and jelly onto bread slices, then roll them up and coat them in a french toast custard. Saute them in a little butter and serve warm for a yummy breakfast treat…or cool them down and pack them up in your child’s lunchbox for a fantastic, portable snack that’s sure to be a hit!

Makes 4 servings
Jif Natural Crunchy Peanut Butter
Smucker’s Natural Strawberry Fruit Spread
8 slices sandwich bread, crusts removed
1/2 cup half and half
1 teaspoon vanilla extract
2 tablespoons agave nectar or maple syrup
1/2 teaspoon ground cinammon
Prepare the custard by combining the eggs, half and hald, vanilla extract, agave/maple syrup and cinnamon in a shallow dish. Set aside.
Cut the crusts off of the slices of sandwich bread. Use a rolling pin to flatten the bread slices so they’re nice and thin.
Spread a thin layer of peanut butter and jelly in the center of each bread slice, leaving a 1/2 in border around the edges.
Roll each slice into a tight cylinder, with the seam side facing down.
Heat a pan to medium-low heat, and melt one tablespoon of butter. Dip each french toast roll up into the custard, then place into the pan. Cook the french toast rolls ups for 5-7 minutes, until each side is golden brown.
