Slow cooker chicken tortilla soup is a delicious Tex-Mex inspired soup that features Chicken, tomatoes, corn, black beans, avocado, cheese, and addictively crunchy tortilla strips! This recipe is a fast & easy weeknight meal, and so much better than from a restaurant.

Ah, the slow cooker.  Such a genius invention if you ask me, especially for busy weekdays and cool nights.  A slow cooker allows you to make easy, slow-cooked, flavorful meals, without having to slave over a stove.  Toss everything into the slow cooker, set it and forget it.  After a busy work and school day, you can come home to a meal that’s ready when you are!

One of my favorite soup recipes is this slow cooker chicken tortilla soup.  This soup is slightly spicy, super flavorful and chockful of veggies and protein!  Delicious and hearty, this chicken tortilla soup eats like a meal.  Add some fresh garnishes like crispy tortilla strips, avocado and sour cream, and you have an amazing bowl of deliciousness for you and your family to enjoy.

What’s In Chicken Tortilla Soup?

Well, chicken, of course! But this soup also has lots of veggies like corn, red bell peppers, onion and garlic, so it’s packed with flavor and nutrition. We add protein by adding black beans, and a classic smoky with canned fire-roasted tomatoes. The tortillas add a yummy crunch, and the avocado and sour cream give the soup a cooling effect that tastes like a taco in a bowl. So good!

Do I have to use boneless skinless chicken breasts?

Nope—rotisserie chicken is also a perfect substitute, and will cut down on the amount of time the soup needs to cook in the slow cooker. Substitute in an equal amount and cook until heated through. Sometimes I buy a rotisserie chicken just to make this dish!

What else can I top this soup with?

I love to load mine up with ripe avocado, crispy tortilla strips, and sour cream, but really any of your favorite nacho fixings work. You can top the soup with shredded cheese, swap out the sour cream for plain greek yogurt, add some hot sauce or a squeeze of lime juice. The beauty of this recipe is that you can customize your bowl to your liking!

How long does slow cooker chicken tortilla soup last?

This one of those recipes that is even more delicious the next day. This chicken tortilla soup lasts in the fridge for up to 5 days in a resealable container. Just heat and serve.

Ingredients

  • 1 bell pepper diced
  • 1 medium onion diced
  • 2 cloves garlic peeled and minced
  • 1 15 oz. can black beans drained and rinsed
  • 1 15 oz. can corn kernels drained
  • 1 10 oz. can diced tomatoes and chiles Rotel
  • 2 cups cooked chicken diced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes optional
  • 5 cups low sodium chicken broth
  • 1/4 cup cilantro chopped
  • 2-3 teaspoons kosher salt to taste

For Garnish

  • Crispy tortilla strips
  • Diced avocado
  • Sour cream
  • Shredded Monterrey Jack cheese

Instructions

  1. Add all the ingredients into the slow cooker except the cilantro and salt.
  2. Cover and cook on low for 5-6 hours, or high for 3-4 hours.
  3. Stir in the chopped cilantro and season with salt to taste.
  4. Garnish each bowl with shredded cheese, diced avocado, crispy tortilla strips and sour cream.
